Café Rivense del Chirripó is a family micro mill founded by Régulo Ureña and Isabel Rojas in 2005. Although we’ve been working with the family since 2019, we became acquainted years prior when Régulo and his son Ricardo were in the Bay Area visiting different roasteries. Over the years, Café Rivense has gained recognition for producing high-quality coffees.
Full honey black honey) processing starts when ripe red cherries are picked, de-pulped, and placed on raised drying beds. The coffee is transported without water to keep the mucilage full and clean. It takes 10-12 days to dry before it is milled, sorted, and packaged at the mill. This coffee has layers of sweetness, with red grape peaking through at first sip before it settles into syrupy notes of dried fig and toffee.
